First of all, add 2 cups of ragi flour, 1 cup of rice flour and 1 cup of semolina in a bowl. Now add 1 cup of curd and 1 inch of finely chopped ginger, 2 finely chopped green chillies and 1 teaspoon of cumin. Along with this, add salt as per taste, now add 1 to 2 cups of water and mix it well. Keep in mind that the batter should not be made too thin, it should be kept medium thick.
Step 2: Prepare Tadka
Prepare the tadka to add to this batter. To make the tadka, heat 2 spoons of oil in a pan, add half a spoon of cumin, 8 to 10 curry leaves, 1 spoon of mustard seeds and heat it well. Now add this tadka to the batter. Add it, mix everything well and keep it covered for 15 minutes.

After about 10 to 15 minutes, add finely chopped onion in the batter, mix well. If you want, you can make this dosa without onion also. Now heat a non-stick pan on slow flame of gas, pour 1 spoon of oil on it and fry the pan. But spread it well,
Now take a ladleful of batter in it, put it on the pan and spread it in a round shape like dosa, cook it on slow flame, in about 3 minutes one side will be cooked well, now turn it to the other side with the help of a spoon. Now add 2 spoons of oil in the same pan and add 1 cup finely chopped ginger and fry it well. After the ginger is fried, put it all in a mixer jar and add 1 to 2 inches of jaggery and grind it after adding salt as per taste.
To add tadka to it, put 2 spoons of oil in a pan and add 1 teaspoon cumin seeds, add 6 to 7 curry leaves and heat it. Now add this tadka to ginger paste. Ginger chutney is ready, take it out in a bowl. And serve with dosa.
